Making santons became a family tradition and it was passed down from generation to generation. Those who do make them are known as Santonniers, and the tradition is kept alive by some small towns in Provencal France, where Santon fairs are held every Christmas. Santonniers are most common in Aubagne, Marseille, Aix en Provence and Arles (Remember Provence, 2019). Santon fairs take place in France every December, and families are welcome to walk around and browse all of the santons available for purchase. There is also a famous santonnier, known as Paul Fouque, who works with his daughter and grandchild to make the santons (Foster, 1998).
